Lemon Paprika Chicken

- Juice of 2 lemons
- 1 tbsp. olive oil
- 1 tsp paprika
- 1 tsp. honey
- 2 boneless, skinless chicken breasts (+/-5 oz.)
- salt - to taste
In a shallow dish, combine lemon juice, oil, paprika, honey, and salt to taste.
Add chicken breasts, turning to coat with the marinade.
Set aside for 10 minutes to infuse with flavor.
Preheat the broiler.
Broil chicken for 3 or 4 minutes per side, until no longer pink inside.
Serve with quick-cooking barley tossed with fresh thyme leaves or chopped parsley; steamed baby carrots and green beans.
