Quinoa with Fruit & Coconut Milk

Quinoa (pronounced KEEN-wah) has become a lot more mainstream in recent years. With its high fiber and protein content, as well as packing magnesium and iron, its delicate, nutty taste has become a great superfood alternative to starchier processed rice and pasta.

Usually considered a whole grain, quinoa is actually an ancient seed. Cooking time is under 20 minutes and it can be used in place of any grain, making it a great choice for gluten free meals as well. Make up a batch and store it fresh up to 5 days in the fridge, making it an easy item to add to meals. Important tip: Some quinoa needs to be rinsed before using. Many are ready to go, but read your package labels.
